Hi. It was a Big Brothers/Big Sisters night, and Katelyn and I made homemade pizza, just with stuff in the refrigerator. It turned out so-o good that i wanted to share it:

2 packets Betty Crocker pizza mix
1 TBL. olive oil

fix crust and set to rise, covered.

1 TBL. olive oil
1 TBL. canola oil
1 generous TBL. minced garlic
2 sticks celery, large chopped
1 cup fresh green pepper, large chopped
1/2 cup fresh yellow onion, large chopped

saute all the above together. when onions are limp and transparent, add:

1-1/2 cups canned, chopped tomatoes, drained
1 3-oz. can minced black olives, drained
1 large jar Green Giant sliced mushrooms, drained
1 TBL. Italian seasoning

spread crust in well-greased pizza pan. top with canned pizza sauce. spread on sauted veggies. top with a generous amount of grated mozzarella cheese, grated parmesan/romano-mix cheese and a dusting of Italian seasoning. place pizza pan on a cookie sheet and--

Bake in a preheated, 450-degree F. oven for six minutes. turn 180 degrees and bake six more minutes, or until cheese is lightly browned.
