Nice n easy greek green bean salad. Eat this hot, cold or middling.

get yourself some nice fresh green beans..de-string if they need it.
Chop up half an onion into thin rings and then chop a clove of garlic.

Heat 2 tbs strong olive oil in a pan. Fry the onin and the galric until slightly translucent. Add in the beans and stir and fry for about 10 minutes.

Add in a tin of chopped tomatoes...more tins depending on how many beans we're cooking here. (You need enough liquid to cover the beans.)

Cover and simmer until the beans lose the bright green colour and are soft.

Salt and pepper to taste.

If served cold drizzle with olive oil and lemon and munch with nice soft bread.

If served hot..well..you still need the bread to mop up the sauce. I cooked this for a friend who loathes any kind of green bean. Well..she ate mine!!!!
