When pork shoulders or butts go on sale, I stock up too! I fix my pork in the crockpot. Put your pork shoulder in the crockpot, salt and pepper it, add bell pepper, onion, and garlic. I then add 2 tablespoons of apple cider vinegar. Put 1-2 cups of water in the crockpot and cover it with the lid. I let this cook for about 7-8 hours, put it in the refrigerator, and let it cool overnight. In the morning I take the strain the broth--leaving the vegetables and fat behind. Next I take the pork and take all of the edible meat off of the bone. Put it back in the crockpot that you have cleaned, add barbecue sauce, bottled or homemade, and you will have the most wonderful, tender barbecue sandwiches. My family loves it!
