Grilled Catfish with Horseradish Sauce

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound fresh or frozen skinless catfish or other firm fish fillets -- cut 3/4 to 1" thick 1 tablespoon flour 3/4 cup fat-free milk 1 tablespoon snipped fresh chives 2 teaspoons prepared horseradish 1 teaspoon lemon juice 1 teaspoon olive oil 1/8 teaspoon pepper -- optional fresh herb sprigs -- optional
Thaw fish, if frozen. Rinse fish and pat dry. Cut fish into 4 serving-size portions; set aside. PLace flour in a small saucepan. Stir in milk till smooth. Cook and stir till thickened and bubbly. Cook 1 min. more; remove from heat. Stir in the chives, horseradish, lemon juice, and 1/8 tsp salt. Cover and set aside.
Brush fish with oil; sprinkle with salt and pepper, if desired. Place fish in a greased grill basket on the grill over med. coals. Grill till flakes easily with a fork (allow 4-6 min. for each 1/2" thickness ), turning once. To serve, dollop horseradish sauce on top of fish. If desired, garnish with fresh herb sprig.
