Last time I had chicken, I made a side dish of : Onion(I used a red one) in thin wedges, two chopped celery sticks, two carrots in thin slices, two wedges of garlic in thin slices, one squash in half slices. I sauteed all the veggies for a few minutes in a dash of olive oil - not too long, they should stay almost crisp. I then added a tiny tin of corn, half a glass of Uncle Bens sweet ad sour sauce, a tablespoon of Worcestershiresauce and 10 drops of a pepper sauce - I used green Tabasco.
Stirred and heated.
With rice and slices of pineapple eside the chicken, that made a nice and quick meal.
Oh, we are two people, hence the tiny tin of corn.
