Sausage Skillet, with some toasted italian bread (with garlic butter),
and steamed fresh green beans. I just found this site today and
have really enjoyed reading the recipes that y'all shared. Here is a
quick and easy one my family enjoys.

Sausage Skillet -- serves 4

4 red new potatoes, cute in 1/12" cubes (unpeeled)
4 italian style sausages (I use the turkey sausage)
2 teaspoons olive oil (or more, as needed)
1 medium onion, sliced
1 green bell pepper, cut in strips
1 red bell pepper, cut in strips
Dried oregano

Discard casings and cut sausages into 1/4" slices. In skillet, place
potatoes and sausages, just barely covering with water; simmer covered,
until sausage is fully cooked and potatoes are tender (about 20 min).
Remove water from pan (i do the ole cover with a lid leaving a crack
and let the water pour out trick -- dont worry about every bit of
water being poured out).

Add the olive oil, onion and peppers, and sprinkle oregano over (to
taste). Simmer for 5 or 10 min, stirring gently to mix.

Enjoy!
