Hi Kathy; Succotash is Lima beans and corn. It is used as a vegetable side dish, and is served hot. You can use 1 can of limas, drained, 1 can whole kernel corn, drained. Add a tsp. or so of margarine or butter and about 1/3 cup of light cream. Or you could use the limas, drained and 1 can of cream style corn. In all my 62 years, I have never heard of green beans or carrots in succotash.
