In Norway most people have their main meal around 4:30 - right after work. So - dinner often is made in a hurry, people are hungry and the kids often are going to bandpractice or football or something.
Today I,m having salted herring with beet/apple salad and plain boiled potatoes.

The herring is not cooked in any way, just salted very much and then matured for more than 6 weeks. The flesh turns firm, but not white or stiff. When served, the fish is filleed and soaked in milk/water for a few hours, then just rinsed and dried. It's called "spekesild" and is also tha base for all pickeled herring courses served on authentic scandinavian smorgasbords.

The salad is more common - one cup each of: raw apples, boiled potatoes, pickled beets, yellow onions - all cut in small cubes. All mixed in a dressing of sour cream, a little low fat mayonnaise, a teaspoon of worchestershire sauce, a teaspoon of sugar. Not too much dressing, just to hold it all together.

Sounds weird? It isn't. It is a little tart, a little sweet, a little tangy, a little mild. Goes with smoked cold meats too. Even with a hamburger. Nice with hotdogs or grilled sausages.
