My Potato Soup is my son's favorite and its simple.
Scrub potatoes and cut into chunks (we don't peel, but you can). Place in pot with about 1-inch water; boil until soft. Mash in pot with the cooking water, leaving some chunks.
Add whatever else you like in your soup (celery, onions--I usually saute them before adding).
Add milk, half and half or canned milk (any combination) till it is the right consistency for you.
Season in the bowls as you like it. We add: cubes of cheese Parmesan cheese bacon bits parsley whatever...
