Chili for a Crowd
This is my Dad's recipe for chili. It's very simple, extremely tasty, and keeps in the fridge I don't cut the recipe when I make it for just myself and significant other, and it takes us a while to eat it!

In a large pot or heavy Dutch oven fry:
3 lbs ground beef
with:
1 onion, chopped
1 green pepper, chopped
Drain grease and stir in:
1 envelope chili seasoning of choice
1 quart tomato juice
4 cans undrained kidney and/or pinto beans
about 1/4 cup canned banana pepper juice with some banana peppers
1 tsp salt or so
a dash of red pepper
about 1/2 tsp chili powder

Cook for about a half hour, then turn off heat and let it cool for a few hours, the mixture will thicken. Recipe open to improvisation - add a combination of peppers, different types of beans, or seasoned sausage rather than hamburger. Put a couple baggies of rice or a baked potato in the cooler as a serving variation (a bit of cheese melted over a chili-potato is delicious, I've found).

There is an excellent white chili made with chicken that my mother makes ... she uses the recipe on the back of the package of seasoning! Just an idea.
