Fruit and Chicken Salad This was one of my mom's favorite recipes.
3 cups diced leftover chicken 2 cups white grapes -- cut in half 1 cup pecan haves or pieces 1 1/2 cups finely minced celery 1 large apple finely diced (optional) 1 cup pineapple (fresh is best, but canned or frozen will work) 1 juicy orange 1 1/2 cups mayo onion powder to taste (I use 1/2 teaspoon)
Combine mayonnaise woth onion powder and juice from the orange and set aside.
Mix the remaining ingredients and fold in dressing.
Refrigerate at least 2 hours before serving.
