Lime Marinade -- Makes enough for approx 1-1/2 lbs fish
1/3 cup cooking oil 1/2 cup white wine vinegar 1 medium onion, chopped 2 medium cloves garlic, crushed 1-1/2 teaspoons grated lime peel 2 tablespoons lime juice 1/2 teaspoon dried thyme 1/2 teaspoon paprika
In a small saucepan, bring all ingredients to boiling. Simmer, uncovered, 5 minutes. Strain; set aside marinade to cool slightly. Place fish and marinade in large zip-loc bag, turn bag over to coat fish completely. Cover and refrigerate up to 3 hours - no more or you will "pickle" your fish.
Prepare fish as desired - broil or grill.

Note: Just a warning.. the vinegar smells strongly as it heats up.. I had no idea of this the 1st time I made cooked this and couldnt believe how awful the house smelled!! However, when you cook the fish, it smells delicious!
