I only have this rec. in metric have't got round to converting it yet.

BLACK CHERRY BATTERCAKE
*************************
425g John West Stoned black cherries
60ml cherry liqueur
100ml milk
150ml cream
4 eggs
2ml vanilla essense
120g caster sugar
20g cake flour(plain)
pinch salt

Preheat oven to 200 c
Sprinkle liqueur over cherries and stir. Bring milk and cream to boil, remove from heat and add vanilla. Beat eggs and sugar til smooth, sift flour and mix in. Strain milk in and mix well. Butter pie dish well and generously sprinkle with extra caster sugar. Pour batter into dish, drain cherries and sprinkle over batter.
bake for +-25 mins. Remove from oven and sprinkle over caster sugar. Use drained cherry liquid to make a yummy sauce, heating and thickening with a little arrowroot.
