Fusilli with Sundried Tomato Sauce
This is very rich but very nice for a treat.
300g Fussilli, cooked and kept warm 1 Tbls each olive oil and butter 4 spring onions, chopped finely 2 cloves garlic, crushed 2 Tbls fresh basil, chopped finely 6-8 drained and diced sundried tomatoes (I use the oil soaked type, but you can use dry and soak them) salt and freshly ground pepper 1 cup cream (add a bit more if you like alot of sauce)
Saute onions and garlic in heated oil add butter gently until soft. Add basil and cream also tomatoes. Simmer gently for about 3 mins and season. Pour sauce over pasta and serve with parmasan shavings.
