Here's my chicken chili recipe that everyone loves:
6 chicken breast halves-boiled, skinned, boned and shredded 1 medium onion, chopped 1 medium green pepper, chopped 2 cloves garlic, minced 1 T. veg oil 3 cans stewed tomatoes, undrained and chopped 2/3 cup picante sauce (from a jar) 1 t chili powder 1 t ground cumin 1/2 t salt
Saute onion, green pepper and garlic in oil until soft. Remove oil. Add chicken and rest of ingredients and simmer for an hour or more. You may add more stewed tomatoes, picante sauce and spices to taste.
