Elly, This comes from the 1986 edition of the Southern Living Annual Recipes. I have everyone but three of these annual cookbooks, 1980, 1981, 1982. They are outrageously expensive, but this book contains all of the recipes that were published in SOUTHERN LIVING during the year. This was first made by my husband and I tried, foolishly, to make it and he has never made the recipe again! This page is so spattered--we must have had this dish hundreds of times! ENJOY! P.S. MACARONI AND CHEESE WITH WINE
1 1/2 cups uncooked elbow macaroni 1/4 cup chopped onion 3 T. butter, melted 3 T. all-purpose flour 1 3/4 cups milk 1/4 cup dry white wine 1/2 tsp. salt pinch of pepper 1 1/2 cups (6 ounces) shredded cheddar cheese paprika (optional)
Cook macaroni acording to package directions, omitting salt; drain and set aside. Saute onion in butter in a heavy saucepan; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk and wine; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Remove from heat; add salt, pepper, and cheddar cheese. Stir until cheese melts. Add macaroni and mix well. Pour into a lightly greased 2-quart casserole dish. Sprinkle top with paprika, if desired. Cover and bake at 350 degrees for 15 minutes; uncover and continue baking 15 minutes. Yield: 6 servings. |
