Hi Jill, Try these BRUSSEL SPROUT and MUSHROOM BAKE 250g brussel sprouts 250g black mushrooms 1 Tbls olive oil 3 Tbls tomato puree 1 red pepper finely diced pinch paprika herbal salt to taste
Place the sprouts and mushrooms in an ovenproof dish.Mix tom puree,oil,pepper ,and seasoning and stir into dish.Cover and bake for 180c for20-30 mins.Just before serving drizzle a little oil over and sesame seeds if liked.
BAKED EGGPLANT AND TOMATO 2 eggplants,cubed 2 tomatoes,cubed 2 spring onions chopped 1 tsp dried origanum or fresh pinch cayenne pepper
Layer all ingredients in a casserole dish,cover and bake at 180c for 1hr.To serve sprinkle a little feta cheese over if you like. Hope you like them. Love Julie
