I am not sure if you mean pierogies, but here is a tried and true Polish recipe:

Boil potatoes (we usually make huge batches at once, so do as many as you need, Drain potatoes when softened, making SURE YOU SAVE THE WATER. Mash potatoes with velveeta cheese, salt and pepper. To make the pastry you just use twice as much flour as potato water (ie 5 cups flour, 2 1/2 cups potato water). Cut pastry using a cup or something round. Put a tbsp of potatoe mixture in centre. Fold over and pinch all sides. Place pierogies in very boiling water and remove when they rise to the top. Sautee butter and onions. Place pierogies in casserole dish with butter and onions and bake for 20 minutes at 300 degrees. Serve with sour cream.
