This is really very easy to put together but makes a very beautiful presentation and tastes great!

Chicken Breasts in Phyllo Pastry - serves 8

1 cup mayonnaise or salad dressing
2/3 cup chopped green onions
3-1/2 tablespoons fresh lemon juice
1 small clove garlic, minced
3/4 teaspoon dried tarragon
8 chicken breast halves, skinned and boned
1/4 teaspoon salt
1/8 teaspoon pepper
16 sheets frozen phyllo pastry, thawed
Butter flavored cooking spray
3-1/2 tablespoons greated Parmesan cheese

Combine mayonnaise, green onions, lemon juice, garlic & tarragon in a small mixing bowl. Set aside.

Sprinkle chicken breasts with salt & pepper. Place on sheet of phyllo dough on a sheet of plastic wrap; spray evenly with cooking spray. Place another sheet of phyllo on top; spray with cooking spray. Spread about 3 tablespoon of mayonnaise mixture on both sides of 1 chicken breast; place breast diagonally in one corner of stacked pastry sheets. Fold corner over breast; fold sides over, and carefully roll up in pastry. Place seam side down on an ungreased 15x10 jellyroll pan.

Repeat procedure with remaining phyllo, cooking spray, mayonnaise, and chicken breasts. Spray tops of pastry bundles with cooking spray; sprinkle with Parmesan cheese. Bake at 350 for 40 - 45 minutes, or until chicken breasts are done. Serve immediately.

Note: You can subsitute melted butter for the cooking spray but its a lot more time consuming to brush the sheets with butter than it is to spray them. I tried it this way once and was sorry I did cus it took so long -- but the option is there is you prefer butter to cooking spray.
