Hi Ginny! This Casserole Chicken was posted on the web somewhere! I forget where I found it. It is wonderful, and although it is not quite a lasagna, it is close. Let me know if you like it.

Casserole Chicken

8 oz. medium noodles, cooked and set aside
1/2 cup butter
1/2 cup flour
1 tsp salt
1/2 tsp pepper
1 tsp basil
4 cups chicken broth
l6 oz. carton ricotta or cottage cheese mixed with one egg
2 cups mozzarella
3/4cup parmesan

l. Melt the butter and combine with the flour, salt, pepper, basil and chicken
broth to make a basic white sauce. Stir in 4 cups cooked chicken

2. In a 9xl3 or larger pan (it drips in a 9xl3!), layer l/3 of chicken/white sauce mixture, l/2 of noodles, a layer of ricotta/egg mixture and mozzarella; repeat layers ending with the chicken/white sauce mixture. Sprinkle with the parmesan.

3. Bake tightly covered in a 350 oven for 60 to 75 minutes. Allow to set 20 minutes before cutting.

I'm sure you could add mushrooms or adapt to suit your tastes. I take a 3-4 pound chicken, toss it in my pressure cooker with some herbs and veges, 2cups of water, and cook it on high for 45 minutes. I use the meat and broth for the recipe and it's a very tasty dish. You could probably cook the chicken the day before in a crockpot, too to make it less work! Good luck!.
