Gratin recipe
Preheat oven to 375F Serves 6
About 2 # onions, peeled & sliced thin 3 T butter (I use unsalted) About 3 # potatoes, peeled & sliced thin Nutmeg & Freshly ground pepper 1 # leftover ham 1 1/2-2 cups cream
Saute onions in butter but don't brown them. Layer half the potatoes in a buttered baking dish. (It's okay for them to overlap.) Top with half of the onions. Season with pepper & nutmeg. Layer the ham. Follow with the rest of the onions and then the potatoes on top in a neat pattern if you wish. Pour most of the cream over-(start with 1 1/4 cup). Top with nutmeg & pepper. As you bake be sure to baste with the cream from the dish adding extra when needed. You don't want the top layer to get dried out. Bake for about 1 1/2 hours. The cream should be absorbed, the top golden and the potatoes tender.
You can add salt if you wish. It depends on how salty your ham is to begin with. You can also add a bit of gruyere cheese to this or leave out the ham or add other veggies with the potatoes perhaps? I also have cut the recipe in half at times. Hope you like it.
