I usually double these ingredients, so I've allways got some.
CURRY POWDER ************ 4 Tbls coriander seeds 1 Tbls cumin seeds 3 dried red chillis(add more if you want it hotter) 1 tsp ground ginger 2 tsp ground tumeric 1/4 tsp mustard seeds 1/4 tspfenugreek seeds a 3/4 inch stick cinnamon 3 cardamon pods 1 tsp freshly ground pepper 1 whole clove
Dry roast in a skillet over a gentle heat til fragrent(the smell is wonderful!!!!!).Let cool then grind.Store for about 6 wks in a cool dark place.I don,t keep it longer as it will lose its taste.
