Hi! A friend gave me this wonderful recipe for a scrumptious Artichoke Rice Salad. Try it, and I think you'll agree!
ARTICHOKE RICE SALAD 1 - 8 oz. box chicken-flavored Rice-a-Roni 1- 6 oz. jar marinated artichoke hearts 1/3 cup mayonnaise (I use Lite) 1/4 tsp. curry powder (do NOT leave out) 12 sliced pimento-stuffed green olives 1/2 cup chopped green pepper 3 green onions, thinly sliced 1 small can sliced water chestnuts (or use toasted chopped pecans)
Cook rice as directed on the box. Drain and chop artichokes. Reserve the liquid and blend with curry & mayonnaise. Add to other ingredients & enjoy!
Note: you can add chopped chicken (I do) - a way to use left-overs, and serve as a main dish HOT, or serve cold as a salad.
