Basically what I do to make these is use:

1 chicken cutlet (cus they are already thinly sliced, otherwise pound a chicken
breast till thin) per person
1 baby carrot cut into quarters
1 green bean
1 yellow (wax) bean
Seasoning of choice (I use garlic/black pepper mix, dill weed & lemon zest)

Sprinkle seasonings on chicken to taste. Place all veggies on one end of
chicken and roll up as tightly as possible. Secure roll with oiled toothpick.

Prepare as many rolls as needed for meal (I generally make 2 cutlets for my
husband if using those, 1 breast half if using that). Saute till brown in a
oiled skillet over medium heat. Meanwhile, prepare your favorite poultry type
gravy mix adding fresh herbs if you like (parsley & basil are nice). Pour into
skillet when chicken is brown, lower heat & cover pan. Cook until chicken is
done, about 10 minutes. Remove chicken from pan, and heat gravy over high
heat, uncovered, until thicken (if necessary).

Slice chicken and fan slices on plate for a nice presentation.
