Boy, is the water coming down in buckets here! I am just praying the electricity does not go out while my food is in the oven...tonight we are having Grecian Chicken (again), Corn Pudding, Copper Pennies, Cut Green Beans, Squash Bread, Farm Fresh Sliced Tomato Salad and Ultimate Chocolate Chip Cookies. Hope you enjoy!

Corn Pudding

This recipe was given to me by my good friend Jean who has it every Thanksgiving at her house for her many guests. It is a delicious side dish.

2 T. butter
5 eggs
2/3 c. milk
2/3 c. heavy cream
1 t. salt
1/4 t. blk. pepper
1/8 t. cayenne pepper
4 c. frozen corn kernels, thawed
4 scallions, chopped
Heat the oven to 350.
Butter a shallow 1 1/2 qt. baking dish using 1/2 T. of the butter.
In a large bowl, beat the eggs, milk, cream, salt, pepper and cayenne. Stir in the corn and scallions. Pour the mixture into the buttered dish. Dot the surface with the remaining butter and bake until the pudding is just set, about 45 mts.

Copper Pennies

4 large carrots, peeled and cut into slices
1/2 c. water
dash of dessert blend powder
dash of cinnamon
1 T. butter
4 t. sugar
Melt the butter in a small saucepan in the water with the dessert blend and cinnamon along with the sugar. Put the carrot slices and cook over medium until the carrot slices are nice and tender. About 25 mts.

Squash Bread

3 c. yellow crookneck squash, washed and cut into chunks
2 eggs, beaten
1/2 cup buttermilk
1/2 t. salt
1/4 t. pepper
6 oz. small curd cottage cheese
1 box Jiffy Corn Bread
1/2 stick butter, melted
Cook tyhe chunk of squash in a little bit of water til tender. Drain well and mince. Place the squash in a bowl and add the eggs, milk, salt, pepper and cottage cheese. Stir in the cornbread mix and mix well. Pour into a buttered 1 1/2 qt. baking dish. Pour the melted butter over the top and bake in a 375 oven for 30 mts. During the last 5 mts. sprinkle 1/2 cup grated cheddar cheese over.

Ultimate Chocolate Chip Cookies

Oven at 375

3/4 c. Crisco, butter flavor
1 1/4 c. packed lite brown sugar
2 T. milk
1 T. vanilla
1 egg
1 3/4 c. flour
1 t. salt
3/4 t. baking soda
1 1/2 c. choc. chips

Combine the Crisco, sugar, milk, and vanilla. Beat at med. speed. Beat in eggs. Combine dry ingredients and beat into the Crisco mixture. Stir in the chips. Drop by rounded tablespoon onto ungreased cookie sheet. Bake 8-9 mts for chewy or 11-13 for crispy. Makes 3 dozen
