Hello, I have a recipe for Cheesy Chicken Roll ups that is fabulous and very
impressive when made for company. This can be made the day before and then
cooked the next night. It is a bit of work to make but it is GREAT. I would
serve a salad, some great crusty bread and maybe glazed baby carrots or another
vegetable.

Cheesy Chicken Roll-ups



1 Med. Onion (diced)

4 oz. Fresh mushrooms (Bacon substituted here is great)

1/4 cup butter

3 chicken breasts cut into bite size pieces

3/4 cup dry white wine

1/2 teaspoon tarragon leaves (crushed)

1/2 teaspoon salt & pepper

6 uncooked lasagna noodles (cooked, and cut lengthwise into halves)

1 pkg. (8 oz.) cream cheese (softened and cubed)

1/2 cup heavy cream

1/2 cup sour cream

1 1/2 cups shredded Swiss cheese (divided)

3 tablespoons toasted sliced almonds chopped.

Chopped parsley (optional)

1/2 cup Munster cheese



In large skillet sauté onion and mushrooms in butter until tender.

Add chicken, wine, tarragon, salt and pepper.

Bring to a boil.

Reduce heat to low and simmer 10 minutes.

Curl each lasagna noodle into a circle.

Arrange in greased 13x9" pan

Using a slotted spoon fill each with chicken mixture. (Reserving liquid)

To liquid in pan add cream cheese, heavy cream, sour cream, * cup Swiss cheese
and * cup Munster cheese.

Cook and stir until cheese melts (do not boil)

Pour over lasagna noodles.

Sprinkle with remaining cheese and almonds.

Cover with foil.

Bake 325 degrees 35 minutes or until bubbly.



Glazed Carrots

not a real exact recipe as I just throw it together

baby carrots cooked

equal parts butter and good maple syrup ( usually I use about 1/2 cup for a
large bag of carrots)

pour maple syrup and butter into saute pan and heat on med low heat until
mixture is carmalized and then turn heat up to high and add carrots. Saute
carrots until liquid is gone or almost gone.
