Here we go............. You,ll need 2 1/2 cups cooked long grain rice 4 eggs lightly beaten 1 cup sliced mushrooms 10 spring onions chopped 2 tsp root ginger grated 3 tsp soy sauce 2 Tbls oil
Heat oil in a wok or large saucepan and stir in onions,mushrooms and ginger,toss for 1 minute,add eggs and lightly scramble then place on a warm plate.Add rice to wok and heat to warm through,return eggs to pan and add soy sauce then mix well and serve. Enjoy Julie
