Hi all, This is what we,re having for supper tonight a good old family favourite,I,ll be serving it with some pumpkin and pecan bread I made this afternoon and to end with a coffee self-saucing pud.
Scandanavian Wedding Soup *************************************** 2 cups split yellow peas 2 large sweet carrots diced 1 large onion diced 8 cups good chicken stock 3 celery stalks diced 2 parsnips diced 2tsp mustard (I prefer the Maille whole grain) all spice just a touch of ground 1 tsp of............cumin marjorm thyme 2 tsp salt to taste( i don,t bother with home made chic. stock) freshly ground pepper to taste,i love it swirl of creme or yogurt.
METHOD *************** Simmer plit peas together with veggies gently for about 1 1/2 hrs.Puree then add seasoning and serve hot with a good swirl of creme.YUM!!!!!!!!!!!!!!!!!!!
