Rita's Shrimp Quiche

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound med-large shrimp -- cut up 1 cup cheddar cheese -- shredded 3 ounces cream cheese -- cut in 1/4" cubes 1/3 cup green onion -- sliced 2 ounces pimiento 2 cups milk 1/2 cup Bisquick® baking mix 4 eggs 1 dash nutmeg 3/4 teaspoon salt
Heat oven to 400 degrees. Grease pie plate(10x1 1/2 in.) or use spray Pam. Mix Shrimp, cheeses, onion and pimento in plate. Beat remaining ingredients until smooth, 15 seconds in blender or 1 minutes with a hand beater. Pour into plate. Bake until knife inserted between center and edge comes out clean, 50-60 minutes. Cool 5 minutes
