BG, last night must have been the night for Mexican food. We had steak fajitas. These were really easy to make. Using my Hamilton Beach Grill, a George Foreman knock-off, I grilled sirloin steaks for Saturday night supper. I grilled more than we needed so that I could make fajitas on Monday night. The steaks were put in the refrigerator after grilling. When I got home from work, I sliced the tomatoes, onions, and lettuce. The steak was quick to reheat in the microwave. Using flour tortillas, I put some fat-free refried beans in the center, added grilled peppers, shredded cheese, and some of the steak that had been cut into bite-size pieces. The fajitas were served with the lettuce, tomato, and onion on the side. Guacamole (from the dairy case) was put on each plate. This was certainly a "meal in a wrap." We also had Jello that I made yesterday morning. It was a hearty, but easy meal.
