I'm with Debbie, I don't cook on Mother's Day either. Hubby and the kids do it. For a late breakfast they fixed me Picante Omelet Pie with toasted Cinnamon Oatmeal Raisin Bread, sliced tomatoes and orange wedges. Very colorful and delicious. I skiped lunch because breakfast was so late. Fot dinner they fixed Mulan's Fresh Baked Fish Sticks (from my daughters Disney cookbook), green beans with new potatoes, beets (left over) sliced tomatoes (from the garden) and cucumbers. It was all very good, even better than usual because I didn't have to cook it.

Picante Omelet Pie

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup picante sauce 1 cup shredded Monterey Jack cheese 1 cup shredded cheddar cheese 6 eggs 1 cup (8oz) sour cream tomato slices and chopped fresh cilantro -- optional
Pour the picante sauce into a lightly greased 10" pie plate or quiche dish. Sprinkle with cheeses; set aside. In a blender or food processor, process eggs and sour cream until smooth. Pour over cheese. Bake at 375 degrees for 20-25 min. or until a knife inserted near the middle comes out clean. Let stand 5 min. before cutting. Garnish with tomato and cilantro, if desired.
