Hi y'all,
This recipe is quick, easy and a big party favourite.
You will need:
2 lb large flat mushrooms (I like swiss brown) 1 bunch of fresh sage (dried leaves will do in a pinch) 1 bulb of garlic good quality olive oil
Preheat your chargrill.
Remove the stems from the mushrooms and paint the caps with olive oil.
Slit a few holes in each cap and insert slivers of garlic and sage leaves. Put the mushrooms, gill side up, onto the hot griddle. You can drizzle some extra oil and scatter some more chopped leaves and sliced garlic over the 'shrooms as they grill.
Remove cooked mushrooms once they start to colour on top and are thoroughly softened. Grind a little fresh black pepper over them and serve them immediately.
To serve:
You can serve them as they are, or sliced and tossed through salads or pasta sauces, or as canapes on toast rounds or crackers with a little fresh pesto or sour cream.
