Found this in a cookbook I just got & remembered your request for help for Christmas (or Thanksgiving?) dinner. It sounds good & not too hard.
Golden Potato Squares
5 lbs potatoes 2/3 C butter, melted 1 C chopped onions 1 can (12 oz) evaporated milk 4 eggs, beaten 2 1/2 tsp salt 1/4 tsp pepper 2 1/4 C shredded cheddar cheese
Peel the potatoes & place in cold water to prevent discoloration. Set aside. preheat the oven to 350 deg F. Grease a 9 x 13 inch baking dish.
Melt the butter in a large skillet. Add the onion & saute until limp, about 5 min. Add the milk & bring to a boil. Remove from the heat.
In a large bowl, combine the eggs, salt, & pepper. Beat until frothy. Shred the potatoes & add to the egg mixture. Toss to combine. Add the milk mixture. Set aside 3/4 C of the cheese, add the rest to the potato mixture & mix well. Spoon the mixture in the prepared baking dish. Bake for 1 hr. Top with the reserved cheese & bake for an additional 30 minutes. Cut into squares & serve hot. Makes 8 - 10 servings
