Tonight we had homemade Boston Baked Beans, homemade Honey-Mustard Oatmeal Bread (recipe to follow)and chocolate cake. A meatless meal but still very comforting.

I made the recipe off the bag for the beans but really wanted to share the bread recipe with you all. It turned out great and was a good compliment to the beans.

"Honey-Mustard Oatmeal Bread" {from Betty Crocker's New Cookbook}

prep 25 mins; proof 2 hrs; bake 35 mins
yield 1 loeaf, 16 slices

3 -3 1/2 cups all purpose flour or bread flour
1/2 cup quick-cooking oats
1 tsp salt (omit if using self rising flour)
1/4 cup honey
2 Tbsp Dijon mustard
2 Tbsp softened butter or margarine
1 pkg regular or quick active dry yeast (1 pkg equals 1 Tbsp)
1 cup very warm water (120-130 degrees)
1 large egg
1 egg white, slightly beaten
1 Tbsp water
quick-cooking oats

1. Mix 1 1/2 cups of the flour with 1/2 cup oats, salt, honey, mustard, butter and yeast in a large bowl. Add the warm water. Beat with electric mixer on low speed for 1 minute, scrape bowl frequently. Beat on medium speed for 1 minute, scraping bowl. Beat in whole egg. Stir in remaining flour, 1/2 cup at a time to make dough easy to handle.

2. Kneed dough on lightly floured surface about 10 minutes until smooth and elastic. PLace in greased bowl, and turn greased side up. Cover and let rise in a warm dry place for 1 hour, about double in size. It's ready when indentation remains when touched.

3. Grease pie plate with shortening

4. Punch dough down. Shape into a ball. Place on pie plate. Mix egg white and Tbsp of water and brush on dough, sprinke with some oats. Cover and let rise again for about 45-60 minutes or until double in size.

5. Heat oven 375 degrees

6. Bake about 35 minutes or until loaf sounds hollow when tapped and is a deep golden brown. Remove from pan a dn let cool n a wire rack.

I think this bread will make great ham, roast beef, chicken or turkey sandwiches as well. It has a hearty flavour.
