Tonight we had Lasagna Florentine, Italian Greens Salad, Garlic Bread and Fresh Fruit.
LASAGNA FLORENTINE yields 10-12 servings
2-3 lbs. lean ground beef 2 med. onions, chopped 2 16 oz. canas steewed tomatoes 18 oz. tomato paste 3 bay leaves salt and pepper to taste 3 cloves garlic, minced 1 T. basil 1/2 t. crushed red pepper flakes 1/2 t. oregano 2 10 oz. packages frozen chopped spinach 4 c. grated mozzarella, divided 1 c. Parmesan, divided 8 oz. lasagna noodles
Sauce: Brown beef and onion in a large skillet. Add tomatoes, paste, all seasonings and simmer 1 hour. Remove from heat and set aside.
Spinach Mixture: Cook spinach according to directions, drain and add 3 c. mozzarella and 1/2 c. Parmesan. Mix well.
Pasta: Cook according to package directions, drain and place in pan of cool water. Pat dry before layering.
Assembly: Layer ingredients in 2 11x7x2 pans or 1 deep dish lasagna pan. First, spread a small amount of sauce in the pan. Layer pasta, spinach and meat sauce to fill the pan, ending with meat sauce. Sprinkle remaining 1 c. mozzarella and 1/2 c. Parmesan on top. Bake at 350 for 45 mts.
