Its warming up here in S.africa which is lovely and the rains are not far away,so we,ve been having supper on the "stoop" (veranda) with the heady smell of Syringa blossem in the air .so for supper last night we had .......Grilled fish with ratatouille 2 Tbls olive oil 4 medium-sized leeks, sliced 3 cloves garlic, crushed 1 green, 1 red pepper, seeded and cubed 2 medium-sized brinjals, cubed, salted and drained 1 medium tin can chopped tomatoes 2 Tbls tomato paste 1 tsp dried oreganum 2 lb hake or Cape Witting steaks(or any white fish you prefer) 2 Tblslemon juice Fresh oreganum, to garnish Heat the olive oil in a large saucepan. Sauté the leeks until almost soft, then add the garlic, peppers and brinjals. Continue to cook for 2 minutes, then add the tomatoes, tomato paste and oreganum. Bring to the boil, then reduce the heat to simmer, cover and cook for 10 minutes, stirring occasionally. In the meantime, place the fish on to a greased baking tray and sprinkle with lemon juice. Grill for 5 minutes on each side, or until fish is cooked through. Serve the grilled fish steaks on a bed of ratatouille and garnish with fresh oreganum.
I served warm garlic and onion bread with it.....For dessert we had.....Warm Brown Pudding with Vanilla Sauce
BATTER 1/2 cup butter 1/2 cup sugar 1 Tbls fine apricot jam 1 egg 1 cup milk 1 tsp fine ginger 1/2 tsp bicarbonate of soda 1/2 tspsalt 1 1/2 cups all purpose flour
SAUCE 2 1/2 cups milk 1 cup sugar 1/2 cup butter 1 tsp vanilla essence BATTER Heat oven to 180 0 C.(350f) Cream butter and sugar. Add jam and egg. Mix very well. Add milk and beat well. Sieve all the dry ingredients together and add to the butter mixture. Mix until smooth. Pour into a greased oven dish and bake for 30 minutes. Take out of the oven and pour 250ml of sauce over the pudding. Put back in the oven and bake for another 15 minutes. Serve with rest of sauce. SAUCE Bring the milk, sugar and butter to boil. Add the vanilla essence and take off.
Variation
Instead of using the vanilla sauce, the batter could mixed with 1/4 cup vinegar, 1/2 cup boiling water and 1/2 cup sugar. It is then a very delicious vinegar pudding. Serve with custard.Hope you all have a great day love Julie
