Its a bit chaotic in my household at the moment with building work and alterations so I,m trying to keep food as simple as possible and trying to cater for the children who are all coming in to eat at odd times due to sports and other activities weekends are great though at least we can all sit down together instead of eating in relays!!!!!!
heres what we had for supper last night.........
Curried Chicken Soup
***************************4 tablespoons butter
1 onion, chopped
1 cup celery with leaves, thinly sliced
1 apple, peeled, cored, and chopped
1/4 cup flour
4 cups chicken stock
1/2 teaspoon curry powder

2 cups cooked chicken, diced
1 cup bean sprouts
salt and pepper, to tasteWe had these with it.........Greek salad pitas

4 pita breads
4 ozs feta cheese, cubed
5 ozs green beans, blanched
4 ozs black olives, stoned and chopped
2 tomatoes, diced
lettuce leaves
garlic

LEMON SAUCE
**************
170 ml (2/3 cup) sour cream
15 ml (1 tbsp) crushed garlic
15 ml (1 tbsp) lemon juice
Serves 4
Warm pitas in a 180oC oven. Cut open pockets and fill with feta cheese, beans, olives, tomatoes and lettuce leaves.

LEMON SAUCE:
Combine all ingredients thoroughly and serve with filled pita breads. Melt butter
Saute onion, celery, and apple for 5 minutes, or until tender.
Stir in flour.
Gradually stir in broth and curry powder. Bring to a boil.
Add chicken and sprouts. Reduce heat, simmer for 5 minutes.
Season to taste with salt and pepper.
Serve 6

I doubled everything up as Craig my 14 year old can eat 3 with out them touching sides!!!!!!!

To end with we had an apple cake I made earlier in the day......

Easy Apple Cake
*************************

1 cup butter
2 cups sugar
2 eggs
2 1/2 cups flour
1 teaspoon EACH: baking powder, baking soda, salt, cinnamon
3 cups finely chopped tart cooking apples (such as Granny Smith)
1/2 cup toasted chopped pecans
1 6-ounce package butterscotch or chocolate morsels (optional) Preheat oven to 350f(180c)

In a mixing bowl, cream together butter and sugar. When light and fluffy, beat in eggs. Stir together flour, baking powder, soda, salt and cinnamon. Gradually beat dry ingredients into butter mixture. Stir in apples, nuts and morsels. Batter will be very thick.

Press batter evenly into a greased 9-by-13-inch baking pan. Bake in preheated oven until cake begins to pull away from sides of pan, about 1 hour. Let cool in pan 10 minutes then cut into squares.
