I got this recipe from a friend who learned it in South Africa, althoug it is really quite Indian. Nonetheless, this is so awesome if you take the time to make it. It's really not that hard.
Maharani Kitchen Chicken 5 onions 6 Chicken Breasts olive Oil 1 tsp salt 1/2 c vinegar 1 1/2 potatoes 4 carrots 1 can tomatoes 4-5 tsp curry pinch cayenne Water 3-6 Cloves garlic Chop onions in small squares and brown in oil. When brown add vinegar. Cut up potato, carrots, and add tomatoes. Add to pan. Add water as the potatoes and tomatoes cook out. Add curry powder, cook 20 minutes then add chicken breasts (chopped if desired). Simmer til tender. Serve over rice with Chutneys and salad. Chutneys: Diced avocado Diced Banana Chopped onion Chopped Tomatoes Raisins Mango Chutney (recipe below or buy some in a jar) 1 mango 1/2 c sugar 1/4 c finely chopped red onion 2 Tbl. White vinegar 2Tbl. green bell pepper, chopped 1 Tbl. grated ginger 1/2 tsp ground ginger 1/8 tsp turmeric 1/8 tsp ground cloves Peel and dice mango. Combine with other ingredients and simmer onlow till thick.( about 20 minutes) Will keep in fridge 1 week.
