How about potato kugel? This was in the Taste of Home magazine, but I've made a few changes. It's very good and very EASY! I hope that y'all like it!
POTATO KUGEL
1 cup onion, chopped 2 T. butter or margarine 4 cups shredded potatoes--I use the frozen hashbrown potatoes 2 cups shredded Cheddar cheese 1/4 cup all-purpose flour 1 tsp. salt 1/4 tsp. pepper 3/4-cup half & half--I use the no-fat kind 4 eggs--I use Egg Beaters
Saute onion in butter and add potatoes. Toss cheese with flour, salt, anad pepper. Combine eggs and cream and stir into potato mixture. Pour the potato mixture into a 9" baking dish and bake at 350 degres for 25-30 minutes or until potatoes are "set."
You might need to make 2 recipes of this dish in order to have enough for everyone that you're planning to serve.
