Here is what we had for a family supper last night as we were all together,unusual for us on a teusday due to sports clubs etc for the boys.So this is what i madeParsnip Soup **************** 1 tablespoon vegetable oil 1lbparsnips, peeled and roughly chopped 1/2lb potatoes, peeled and roughly chopped 4 cups vegetable stock grated rind and juice of 1 lemon salt and pepper snipped fresh chives Heat the oil and lightly cook parsnips and potatoes until soft. Add stock, rind and lemon juice and season. Bring to the boil then simmer for 35-40 minutes. Allow to cool for 5 minutes, then purée and adjust seasoning. Reheat gently. Serve sprinkled with snipped chives. The children fancyed Meatballs so I used a rec i had,t used for some time and it turned out well,its nice to as its basically an all in one dish great for weekday mealsDutch Meat Balls ****************** 1lb lean minced beef 2oz breadcrumbs medium sized onion, peeled and finely chopped 1 tsp tabasco sauce 1 egg, beaten Salt and pepper 3 tbsp canola oil 4oz sliced onions 4 oz sliced mushrooms 1 tbsp plain flour 1 1/2 cups chicken stock 2 tbsp tomato puree 4oz pasta shells, cooked Chopped parsley or parsley sprigs to garnish 1 Mix together minced beef, 1oz breadcrumbs, chopped onion, tabasco sauce, egg and seasoning. 2 Form mixture into about 12 balls and roll in remaining breadcrumbs. 3 Heat oil in frypan and fry meat balls for about 15 minutes, turning frequently. 4 Transfer drained meat balls to ovenproof casserole. 5 Fry onions in frypan for about 2 minutes. 6 Add sliced mushrooms and fry for further 2 minutes. 7 Remove pan from heat and stir in flour, loosening any brown particles stuck to bottom of pan. 8 Return to heat and cook for 2 minutes, stirring. 9 Remove from heat and gradually stir in stock and puree. 10 Bring to boil, stirring all the time and cook until thickened. 11 Pour mixture over meatballs in casserole, stir in cooked pasta shells, cover and cook.

Serves between 4-6 For dessert i made this really easy apple rec I got of the net somewhere but can,t remember!or maybe I was sent it!I served it with vanilla ice-cream.
Easy Apple Cake *************************
1 cup butter 2 cups sugar 2 eggs 2 1/2 cups flour 1 teaspoon EACH: baking powder, baking soda, salt, cinnamon 3 cups finely chopped tart cooking apples (such as Granny Smith) 1/2 cup toasted chopped pecans 1 6-ounce package butterscotch or chocolate morsels (optional)
Preheat oven to 350f(180c)
In a mixing bowl, cream together butter and sugar. When light and fluffy, beat in eggs. Stir together flour, baking powder, soda, salt and cinnamon. Gradually beat dry ingredients into butter mixture. Stir in apples, nuts and morsels. Batter will be very thick.
Press batter evenly into a greased 9-by-13-inch baking pan. Bake in preheated oven until cake begins to pull away from sides of pan, about 1 hour. Let cool in pan 10 minutes then cut into squares.
