Hello Everyone,
Well, last night's dinner was a smash, mainly because you didn't feel "stuffed".Tonight I will be cooking Tilapia Griega (marinated the Greek way), Turkish Salad, Mushroom Stroganoff, Italian Green Beans, Fresh Fruit Cup and Ginger Almond Iced Tea. Looks like a Meditteranean dinner to me, what do you think?
Tilapia Griega
4 Tilapia fillets 1 t. Old Savannah Classic Greek Seasoning* 1 garlic clove, minced 1/2 t. salt 1/4 t. black pepper 1/2 c. olive oil 5 T. lemon juice Place the Tilapia fillets in a glass container. Mix all ingredients and pour over the Tilapia, turning over to coat well. Marinade all night long. Bake in the oven for 10 mts. till done basting once or twice.
*I found this seasonign in the seafood seaction of my local grocer. It's ingredients are salt, paprika, herbs and spices, garlic, parsley. If you can't find it, use equal amounts of garlic, salt, pepper, parsley, oregano, basil, paprika ground up.
Turkish Salad serves 4 2 large tomatoes 1/2 med. onion, chopped 2 med. cucumbers, peeled and chopped 1/2 c. fresh parsley, chopped 1/2 green sweet bell pepper, chopped 1 T. olive oil 1 1/2 lemons salt and pepper to taste Chop tomatoes over a bowl to prevent any lossof juice. Add all the other chopped veggies and oil and toss to coat well. Add the juice of the lemons and toss again. Salt and pepper to taste.
Italian Green Beans
2 cans The Allens Sunshine Brand Cut Italian Green Beans 1 slice onion, chopped 1 slice red bell pepper, chopped 1/2 garlic clove minced salt and pepper to taste
Put all ingredients in a saucepot and heat over med. until done, about 25 mts.
Mushroom Stroganoff
8 oz. Mueller's Old Fashioned egg noodles, cooked and drained according to dir. 1 packet McCormick's Beef Stroganoff Sauce Mix 1 8oz. package sliced mushrooms 1 small onion, chopped 1 garlic clove, minced 1 c. water 1 c. sour cream
Cook and set aside the noodles. Saute the chopped onions and mushrooms til light and golden, add the garlic at the last minute and saute 1 mt. Add this to the noodles in a bowl. Mix the sauce in a saucepot with 1 cup of water. Cover and simmer for 5 mts. over med. heat til thickened. Remove from heat and stir in sour cream. Pour sauce over noodles and gently toss to coat.
Fresh Fruit Cup
1 apple, washed and cored and cubed 1 pear, washed, cored and cubed 1 banana, peeled and sliced 1 peach, washed and cubed splash of orange juice 1 t. almond extract Mix all in a bowl and serve in a cup individually.
