Dear Gina:

Our undisputed and well deserved center of the group and Happy Cooking Sweet Queen of the Kitchen is my friend GINA, and I am sure that everybody agrees with me. Anyway, my friend, thanks for the undeserved honor and for the sweet comment on my postings.

The other day I shared some stew recipes, but I think the posting will not be complete until you share with us your recipe for RABO ENCENDIDO. Could you share Mary Urrutia's Randelman recipe on the subject? And perhaps, your mamita's version and your personal adaptation to her recipe. Rabo encendido is an acquired taste, as fiery as a mild chili, but so delicious, so versatile, so typical of the taste of the Tropics.

Please, my friend, bear with me, and give us a good insight and variations on the dish.
