Blueberry Gems

3/4 c. flour
2 T. sugar
1 t. baking powder
pinch salt
1 egg, beaten
1/3 c. milk
2 T. butter, melted and cooled
1/2 c. blueberries, fresh or frozen
melted butter
cinnamon sugar

Preheat oven to 400. In a bowl, combine flour, sugar, baking powder, and salt. In a separate bowl, combine egg, milk and butter. Add liquid ingredients to dry ingredients and stir just until combined. Fold in blueberries gently. Spoon into greased mini muffin tins and bake 15-20 minutes. Cool in pans 10 minutes then turn out. When cool enough to handle, brush melted butter on tops of gems, and dip in cinnamon sugar. Makes about 14 gems.

Pineapple Pudding

8 slices break, crusts removed, cubed (about 6 cups)
1 1/4 c. sugar
1 c. melted butter
3 eggs, beaten
3/4 c. milk
2 c. pineapple tidbits

Mix bread, sugar and melted butter. Add eggs, pineapple and milk. Bake in casserole in 325 over for 45 minutes.

This is good warm or cold, and for using bread that's less than fresh. Sometimes I skimp on the butter and the sugar with good results. Also, I don't always trim all the crusts off the bread.
