most of my recipes are spur of the moment, many are inspired by my Cuban heritage mixed with Southern regional cultural flavors.
I saw the shark steaks at the grocery store and started thinking of tropical waters thus the mojo and the pineapple. Then as I was walking thru the store I started thinking of what would look appetizing to me on the plate.
My menu more often than not is dictated by the specials in the store. I also tend to cook seasonally, I just adore cooking Fall-type food in the coming months.
