To serve 4 people.Peel and core 4 pears.Squeeze with alittle lemon juice to stop from browning.Make asugar syrup with 2lts of water and 2kgs of sugar.Add 2 cinnamon sticks,4star anise,zest and juice of 2 lemons and 2 oranges some vanilla essence or a vanilla bean.Bring this to the boil.Add the pears and gently simmer for 20-30 mins.Orif a skewer will pierce the pear easily. The caramel sauce is,1lt of cream,1kg of brown sugar and 150gms of butter.Bring this to the boil.To serve,Place a pear in a serving dish w/ some of the liquor and then pour some caramel sauce ontop.Yummo!
