For dinner tonight I had cream of broccoli soup & a turkey bacon sandwich.
Cream of Broccoli Soup
5 cups chicken stock 1/2 lb broccoli, cut up 1/2 cup chopped onion 1/2 cup grated carrots 6 T butter 6 T flour 2 cups milk salt & pepper to taste (I also added a couple handfuls of grated cheddar & monteray jack cheese)
Put first 4 ingredients together & cook about 20 minutes or until vegetables are tender. In separate saucepan, melt butter, add flour & cook over low heat 2 minutes. Stir in milk & continue cooking a few more minutes. Add to stock & vegetables, continue stirring over low heat until heated through. Season with salt & pepper to taste. Add cheese just before serving.
I used the Better Than Bullion Chicken flavor that Gina, FL uses. This is the first time I used it & I liked it alot. I mixed in 2 T with 5 cups of water to use for the chicken stock. The soup turned out very tasty. |
