Good Morning Everyone!

I'll be having lunch at a friend's home this afternoon and bringing her this delicious coffee cake...one of the ingredients in it is mixed nuts, one of those little French gourmet bottles that I pick up here and there. It is a jar with a concoction of mixed almonds, hazelnuts and walnuts in honey. Now don't fret because you can duplicate it at home.

I used 1/3 c. and processed them in the mini-oscar til the mixture was course. Once I run out, I will fill the 12 oz. clean bottle with the above mentioned nuts and then drizzle honey in. Keep it in the refrigerator.

Here's the recipe for the cake:

Delice de Provence Cake

1/3 c. mixed almonds, hazelnuts and walnuts with 2 T. honey, processed in food processor til course
1 T. white sugar
2 T. brown sugar
1 1/2 t. cinnamon
1/2 t. nutmeg
1 T. flour
1/4 t. cloves
Combine all ingredients in a little bowl and mix with a fork til crumbly. Set aside.

Set oven at 350.
cream 2 c. sugar and 1 c. butter (2 sticks)
Add 4 eggs one at a time
1 c. sour cream
1 t. vanilla
Sift together:
2 1/4 c. flour
1 t. baking powder
1/2 t. baking soda
1/8 t. salt
Add to creamed mixture.

Spoon 1/3 batter into greasead and floured bundt pan. Sprinle 1/2 of crumbly mix over batter in the middle. Cover with another 1/3 of batter smoothly over, add remaining filling and cover with remaining batter. Bake 45 min. Cool for 10 min. Invert onto serving platter.

Now for tonight's dinner: My DH wanted some sort of sanwich tonight to keep it simple.

Papas Brava
Seasoned Olives

Panne Rustica Sandwich

1 rustic Italian loaf bread
ham
prosciutto
buffalo mozzarella cheese, sliced
1/2 tomato, sliced
1/2 cucumber, sliced
basil leaves
roasted red pepper slices
olive oil
balsamic vinegar
salt and pepper

Marinate the tomato and cucumber slices in oil and vinegar. Sprinkle with slat and pepper.

Slice the loaf open, press ham, prosciutto, cheese onto bread. Layer with basil leaves, marinated tomatoes and cucumbers, top with roasted red pepper slices. Take bottom bread and drizzle remaining marinade from tomatoes on. Press sandwich together and cover tightly with foil. Place something heavy on top and refrigerate for 20 min. When ready to saerve, cut into wedges.

Serve on plate with Papas Bravas and some seasoned olives.

Papas Brava3-4 potatoes, washed, peeled and sliced
3 T. olive oil
salt and pepper to taste
cayenne pepper to taste
1 med. onion, chopped
1/2 green bell pepper, chopped
1 T. parsley
paprika

Saute onions, bell pepper and garlic in oil for 5 mts. Add potatoes and seasonings and toss to coat well. Adjust the cayenne pepper to your taste. Cover as the steam will tenderize the potatoes, at first cook over med. heat and as they cook, turn to low.

Seasoned Olives

olive oil
1 garlic clove, minced
rosemary
assorted mixed olives

Place assorted mixed olives in small shallow dish, sprinkle with oil, rosemary, garlic.
