was turkey noodle soup. I had put the bones, skin, and drippings from the turkey along with water, pepper, poultry seasoning, rosemary, garlic, and seasoned salt into a crockpot after Monday's Christmas dinner. After it had simmered for about 8 hours, I strained the bones, etc., from the stock. I put the stock into the refrigerator and used it today to make turkey noodle soup.

It is so wonderful to come into our warm house, where the Christmas decorations are still up, and have a nice bowl of soup. It is SO COLD here that it might SNOW on Monday. HURRAY!

Here is the recipe for turkey noodle soup!

TURKEY NOODLE SOUP

stock from roasted turkey (about 1 1/2-2 quarts)
2 cans chicken stock
1 lb. roasted turkey,chopped into small pieces
2-3 ribs of celery, sliced thinly
1 1/2-2 cups carrots (I used the kind that are for dips and are already washed and sliced)
1 T. minced garlic
1 yellow onion, chopped
1 bunch green onions, chopped
1/2-1 tsp. poultry seasoning
1/2-1 tsp. pepper
2 stalks fresh rosemary, chopped
1 cup water
1 pkg. fine noodles

Put the stock into a large pot along with the turkey. Add the vegetables and seasonings. Cook on LOW for 2 hours. Allow the stock to reach the boiling point and add the noodles. Cook for 5-8 minutes or until noodles are done.

I served this with: sliced cheese, crackers, grapes, sliced oranges, and sweet tea with lemon.

Being from the south, we drink iced drinks no matter what the weather!
