Turkey & Brown Rice chili
1 tablespoon vegetable oil 3/4 pund ground turkey breast 1 large onion, chopped (1 cup) 2 cans (14 1/2 ounces each) diced tomatoes, undrained 1 can (15 or 16 ounces) chili beans in sauce, undrained 1 can (4 ounces) chopped green chilies, drained 1/2 cup water 1 tablespoon sugar 2 teaspoons chili powder 1 teaspoon ground cumin 1/3 teaspoon salt 2 cups cooked brown rice
1. Heat oil in 12-inch skillet over medium heat. cook turkey & onion in oil 5 minutes, stirring frequently, until turkey is no longer pink; drain.
2. Mix turkey mixture & remaining ingredients except rice in 3 1/2 to 6 quart slow cooker.
3.Cover & cook on low heat setting 8 to 10 hours (or high heat setting 4 to 5 hours).
4. Stir in rice. Cover & cook on high heat setting about 15 minutes longer or until rice is hot. 6 servings.
Thai chicken
8 chicken thighs (about 2 pounds), skin removed 3/4 cup hot salsa 1/4 cup peanut butter 2 tablespoons lime juice 1 tablespoon soy sauce 1 teaspoon grated gingerroot 1/4 cup chopped peanuts 2 tablespoons chopped fresh cilantro
1. Place chicken in 3 1/2 tp 6 quart slow cooker. Mix remaining ingredients except peanuts & cilantro; pour over chicken.
2. Cover & cook on low heat setting 8 to 9 hours or until juice of chicken is no longer pionk when centers of thickest pieces are cut. Remove chicken from cooker, using slotted spoon; place on serving platter.
3. Remove sauce from slow cooker; skim fat from sauce. Pour over chicken. Sprinkle with peanuts & cilantro. 4 servings
Multi-Bean soup
1 package (20 ounces) 15 or 16 dried bean soup mix, sorted & rinsed 1/2 pound smoked beef sausage ring, cut into 1/4 inch slices 1 large onion, chopped 10 cups water 1 1/2 teaspoons dried thyme leaves 1 teaspoon salt 1/2 teaspoon pepper 2 medium carrots, shredded 1 can (14 1/2 ounces) diced tomatoes, undrained
1. Mix all ingredients except carrots & tomatoes in 5 to 6 quart slow cooker.
2. Cover & cook on high heat setting 8 to 10 hours or until beans are tender.
3. Stir in carrots & tomatoes. Cover & cook on high heat setting about 15 minutes longer or until hot. 12 servings.
Spanish Chicken
1 large onion, chopped 2 cloves garlic, finely chopped 1 large red bell pepper, chopped 1 teaspoon dried oregano leaves 1/2 to 1 teaspoon crushed red pepper 1 pound turkey Italian sausages, cut into 1-inch pieces 1 3/4 pounds boneless, skinless chicken breast halves, cut into 1-inch pieces 1 can (28 ounces) diced tomatoes, undrained 1 can(6 ounces) tomato paste 1 can (14 ounces) artichoke heart quarters, drained 1 can (4 ounces) sliced ripe olives, drained 3 cups hot cooked rice.
1. spray inside of 3 1/2 - 4 quart slow cooker with cooking spray. Mix all ingredients except artichoke hearts, olives & rice in slow cooker.
2.Cover & cook on low heat setting 6 to 8 hours or until sausages & chicken are no longer pink in center. Stir in artichoke hearts & olives; Heat through. Serve with cooked rice. 6 servings |
