Tonight I made garlic meatballs, rice & peas, broccoli and chocolate macaroons for desert.
There are only 2 of us so I halved the following recipe;
GARLIC MEATBALLS
1 lb hamburger 1 Tbsp garlic powder 1 tsp worstshire sauce 1 tsp pepper 1 tsp basil 1 egg pinch of salt
-mix all of the above and shape into meatballs. Brown in a frying pan.
Meanwhile mix together: 1 cup brown sugar 1 tsp dry mustard 6 garlic cloves chopped (as many or few as you like) soya sauce to make the mixture wet
After meatballs are browned, add them to the sauce in a casserole dish, bake at 350 degrees F for 20-30 mins with the lid on. Stir occassionally to coat the meatballs in sauce.
Cook rice according to package directions and add frozen peas to the top when there is about 10-12 minutes of cooking time left, do not mix into the rice until ready to serve. They cook from the steam off the rice.

CHOCOLATE MACAROONS (I love these because they are easy and cure my craving for chocolate!)
melt together: 1/2 cup margarine 1/2 cup milk 1/2 cup unsweetened cocoa powder 2 cups of sugar (I used 1 1/2 tonight and it worked well) -bring to a boil for 2 minutes stirring constantly
Remove from heat and add: 1 cup coconut 2 1/2 cups rolled oats, uncooked 1 tsp vanilla dash of salt (I never add salt and they taste great)
-Combine well and spoon out onto waxed paper. -Store in the fridge.
